Seed Cookies

SEED COOKIES

You don’t have to be a bird to enjoy these seed cookies!!! I got this recipe from a nutritionist and they really hit the spot and are packed with antioxidants , fibre and protein! Simple to make.

1 cup pumpkin seeds

1 cup sunflower seeds

1/2 cup sesame or chia seeds

2 egg whites

1/2 tablespoon maple syrup

1/4 cup raisins or cranberries or goji berries

1 tsp freshly grated ginger

cinnamon to taste

  1. Mix dry ingredients in a bowl
  2. Add egg whites and maple syrup
  3. stir together and drop spoonfuls onto parchment paper
  4. Bake in a preheated 320f oven for 18 min.
  5. Cool completely before storing in an airtight container, when eating to crisp up again lightly heat them in a toaster oven.
