Soba Noodle Bowl
Join me as I cook with Shana to make this delicioius Soba Noodle Bowl. Shana shows us how to exercise while we are cooking which is such a great idea as we are still moving our bodies and being active while we cook. Shana's passion is bringing fitness into everyday life.
Equipment
- 1 bowl
- 1 pot for stove
Ingredients
- 6 oz Soba noodles I used buckwheat noodles
- 2 Avocados sliced
- Toasted sesame oil for drizzling
- 1 Fresh lemon , juiced
- 2 cups Blanched snap peas Put in pot of boiling water for 1-2 minutes
- ¼ cup Edamame beans
- 2 Radishes thinly sliced
- 1 tbsp Sesame seeds
Sesame Dressing
- ¼ cup Rice vinegar
- ½ tsp Maple syrup or honey
- 1 clove Garlic, grated
- 1 tsp Fresh ginger, grated
- ½ tsp Toasted sesame oil
- 2 tbsp Tamari or coconut aminos
Instructions
- Bring an unsalted pot of water to a boil and cook the soba noodles according to package directions. Drain and rinse well in cold water. This helps to remove starches that cause clumping. Toss the noodles with the dressing and divide into 2 to 4 bowls.
- Squeeze fresh lemon juice onto the avocado slices and add to the bowls along with the snap peas, edamame, radish, and sprinkle with sesame seeds. Drizzle with more tamari or sesame oil, if desired.
How to make Sesame dressing
- In a small bowl, combine the vinegar, tamari, sesame oil, ginger, garlic, and honey. Set aside.
