Baked Apples

Dessert is a must in my house on a Friday night and the odd time I have not made it....well, they make known their displeasure😂 These baked apples are a healthier taste on an old favourite.

Equipment

  • 1 baking dish
  • 1 Mixing bowl

Ingredients
  

  • 6 Apples
  • 1 cup Organic Gluten Free oats
  • ½ cup Chopped pecans
  • 1 tsp Cinnamon
  • ½ tsp Nutmeg
  • 2 tbsp Melted coconut oil I use a very very mild EVOO
  • 2 tbsp Maple syrup
  • ½ cup Water

Instructions
 

  • Preheat oven to 400f/200c
  • Keep the apple whole and core the apples, remove the seeds , keep the skin on.Be careful not to cut the apple in half.
    Grease an oven safe baking dish with cooking spray and place the apples in the dish.
  • n a bowl, combine oats, pecans and spices. Drizzle oil and maple syrup and stir to combine.
    Divide the oat mixture evenly among the centre of the apples pressing the filling in towards the centre of the apples.
  • Pour water or cider into the bottom of the baking dish.
    Cover with foil and bake for about 30 minutes making sure to baste the apples with the water every 5-10 minutes.
    Uncover the apples and cook for the last 5 minutes.
    The apples should be fork tender when cooked.Serve with a dollop of greek yoghurt or ice cream.
