Chocolate Chip Gluten free vegan cookies

CHOCOLATE CHIP COOKIES (GLUTEN FREE AND VEGAN BUT DELICIOUS!)

I have been experimenting with Paleo desserts as the variety is huge and they do not use refined sugar and processed flours.These cookies were a huge hit in my house and I have adapted them from the Paleo Sweets cookbook.

INGREDIENTS:
1 1/2 cups almond flour

2 tbsp arrowroot starch

1/4 tsp pink himalayan salt

1/2 tsp baking soda

2 tsp vanilla essence

1/3 cup maple syrup

1/4 cup melted coconut oil

1/3 cup vegan choc chips

Nuts are optional but can use 1/3 cup chopped walnuts, pecans or even almonds.

  1. Preheat oven to 350c and line a cookie sheet with parchment paper
  2. Combine almond flour, arrowroot, salt and baking soda. Stir to combine
  3. Combine vanilla, maple syrup and coconut oil and stir to combine.
  4. Add the wet mixture to the dry, fold in chocolate and nuts.
  5. Use a soup spoon and or mini ice cream scoop and drop spoonfuls onto cookie tray leaving space between them.
  6. Bake 10-15 mins or until brown around the edges, they are light in colour.

Let cool.
