Who doesn’t like oatmeal cookies?
This simple to make recipe contains 4 ingredients!!! That’s it and easy enough to make with the kids. If there is a peanut allergy you can swap out the peanut butter for any nut butter.
It has four ingredients. You can add chocolate chips, or even raisins. They are really yummy and my husband smelt them upstairs and came running down to see what I was baking and declared them delicious!
The sweetener in these cookies comes from brown rice syrup. Brown rice syrup or rice malt syrup as it is known is still a sugar, even if it is made from brown or organic rice.However, it contains no fructose or sucrose, so in this regard it would be better to use than refined sugars, but once again, moderation is key when it comes to sugars.

- 1/3 cup almond flour(100% almond flour or almond meal)
- 1 1/2 cups organic, gluten free oats1/3 cup rice malt syrup plus 1 tbsp
- 3/4 cups organic peanut butter (or any nut butter) Once you eat organic PB you will never go back to anything else as you can literally taste the chemicals.
- 1/4 cup rice malt syrup plus 1 tbsp
Mix almond meal and oats in a bowl together
Mix PB, rice malt syrup in a bowl together, add to the oat mixture and mix until well combined.
Form into balls and press down and place on a parchment paper on a cookie sheet.
Bake in a preheated 180/350f oven for 12 mins or until the edges are a golden brown.
store in a airtight container, (I am going to freeze some of mine)
