Banana, Raspberry and Coconut is a fabulous combination of flavours. These bars are super easy to make, freeze well and are full of fibre and minerals making it a great snack.
1 1/2 cups Shredded coconutunsweetened and natural
½cup Flaxseed mealCan grind in blender flax seeds
⅓cup Raw pumpkin seeds, chopped
⅓cupRaw sunflower seeds, chopped
½cup Fresh raspberries
Instructions
Preheat oven to 350f/180c
Line a baking pan with parchment paper
Mash the bananas in a large bowl. Stir in almond butter, nut milk and vanilla. Add coconut, flaxseed, seeds and mix well.
Break raspberries into small pieces and gently fold into the mixture.Spread the batter in the pan. Bake for 40-50 mins until edges are golden brown and centre is firm to the touch. Cool before slicing into 16 bars.
